Speed of freezing, not length of storage, is what ruins texture
Freeze flat
Bags laid flat rather than blocks. A two-centimetre layer freezes in about an hour; a ten-centimetre block takes most of a day.
Cool first
Down to fridge temperature before it goes in. Putting warm food in raises the temperature of everything else, which partly thaws it.
Label
Contents and date. Everything looks the same at month four and the freezer archaeology that follows wastes more food than it saves.
