Large ice crystals rupture cell walls, and they form when freezing is slow. A thin flat package freezes in an hour and comes out far better than a block.

Freeze flat

Bags laid flat rather than blocks. A two-centimetre layer freezes in about an hour; a ten-centimetre block takes most of a day.

Cool first

Down to fridge temperature before it goes in. Putting warm food in raises the temperature of everything else, which partly thaws it.
