The poke test works and the clock does not

Recipes give proving times for a kitchen at a temperature yours is not. A finger pressed into the dough tells you far more than any timer.

The test

Press a floured finger a centimetre into the dough. If it springs back slowly and leaves a slight dent, it is ready.

Under-proved

Springs back immediately and completely. Give it another twenty minutes and test again rather than baking it and hoping.

Over-proved

The dent stays and the dough sighs. Knock it back, shape again, and prove a second time; it is recoverable and nobody says so.
