### Day three smells like nail varnish, and that is normal

Almost everybody abandons a starter on day three when the wrong bacteria bloom. It passes by day five and nobody warns people about it.

#### Days one to two

Flour and water, equal weights, stirred once a day. Very little happens and that is correct.

#### Day three

It will smell sharp and unpleasant and may rise dramatically. This is the wrong organisms and it passes. Do not throw it away.

#### Days five to seven

The smell turns yoghurty and the rise becomes predictable. From here it doubles in four to six hours and is ready to bake with.
