### Blunt knives cause most kitchen injuries

A sharp knife goes where you point it. A blunt one needs force and skids off skin and vegetables alike, which is when hands get cut.

#### The angle

About fifteen degrees a side for a kitchen knife, which is roughly two stacked coins under the spine. Consistency matters more than precision.

#### The burr

Work one side until you can feel a slight lip along the whole edge, then do the other side. Feeling for the burr is the actual skill.

#### Finishing

A few very light passes alternating sides, then strop on a leather belt. Ten strokes is plenty and more is worse.
